How I destroyed a big tin of chickpeas in two days😂 aka two easy and quick, but yet super tasty, dinners from the beginning of the week😍
I fried the #chickpeas with olive oil and ”mango curry” spice (@santamariafinland ) & had them with brown rice pasta/corn pasta the other day and root vegetable patties on the following day👌🏼

Eating disorders are vastly misunderstood -not only by society, but also by family, friends and loved ones. It is a complex, multifaceted internal struggle that has the highest mortality rate of all mental illnesses. An eating disorder is not defined by your weight and does not discriminate based on your age, gender, ethnicity, sexual orientation, or socioeconomic group.
An eating disorder is ...
❗️NOT YOUR FAULT OR A CHOICE❗️
But recovery is.
Staying silent is one of the deadliest consequences. The severity of your struggle is just as valid as anyone else.
No two eating disorders are the same. No two individuals are the same.
No two paths to recovery are the same.
But everyone’s strength to reach recovery IS the same.
In honour of National Eating Disorder Awareness week (26/2~4/3), I have teamed up with @AWEinspired_ and several incredibly influential women and survivors to bring you some self-care tips for living with an eating disorder 💪🏻🎗✨
It’s estimated that 70 million individuals worldwide suffer with some form of eating disorder, with millions more battling with food and body image issues that have untold negative impacts on their lives. Eating disorder awareness is about spreading the word, busting the myths, getting people support and starting journeys towards healing.
It gives me great pleasure to be featured alongside such role models of my mine (special mention to my friend @brittanyburgunder who I am utterly #aweinspired by!), sharing words of advice from our own experiences, overseen by a brand which celebrates those who have overcome adversity - be it disease, trauma, mental illness, disability or otherwise 🙌🏻 Founded by a 3-time cancer survivor and devoting 20% of all sales towards charities, I’m proud to share their message and additionally share mine further 💛 #NEDAwareness
Shoutout to everyone who helped me decide what to make for lunch😘 Y’all probably don’t know this but I am absolute terrified of cooking anything that splatters (so tofu and veggies is usually something I need to hope my dad will make for me😬). My dad was at work so I made my own tofu and veggie bowl🍲 It turned out so well, and I will definitely be making it again😋
What’s in the bowl?🤷🏻♀️ Details are below⬇️⬇️⬇️
1️⃣ chop up your veggies (I did broccoli and carrots) 🥦 🥕
2️⃣ chop up your tofu and coat in cornstarch
3️⃣ fry tofu in vegetable oil to brown
4️⃣ add in veggies and let simmer
5️⃣ mix ingredients to make glaze — 3 tbsp brown sugar, 1/4 tsp salt, 1 tbsp soy sauce, 1 tbsp ketchup, 3 tbsp rice vinegar, 1/4 cup water
6️⃣ add the glaze into the pan with tofu and veggies until sauce is the perfect consistency for you
