This sunchoke hummus always pleases the crowd ... to accompany we had pickled spring asparagus, fresh carrots, baby sweet potatoes and mushrooms ... all playing their part to make this board complete 🙏🏽
Here’s a bit more of the process of how I’m attaching the scales. For those who aren’t familiar with ceramics, first I score the surface (basically rough it up with that tool that looks like a rake). This step is important in order for slip (liquified clay which acts as a glue) to adhere to it. I apply slip using a brush. Then I place each scale on top of slip and press firmly to attach. As tedious as it may seem, I really enjoy the repetitiveness of the task, and no scale is quite the same.
